As part of my ongoing partnership with Sirimon cheese here’s recipe number 2.
Its the easier if them all. Eggs, a few veges and loads of cheese and ham and an oven. I love these little muffins because they are easy to handle, tasty even when eaten cold (so makes for a great picnic food) and they are cheesy!
Kids love them too so why not give it a whirl. Even for you busy bees going to work, make a batch, store them in the fridge and grab some to go as you leave the house.
Makes 6 muffins
6 large eggs
1 small red, yellow and green pepper, diced
1 medium red onion, diced
4 slices of ham, diced
1 ½ cup grated Sirimon everyday Cheese
Butter
Crack your eggs into a bowl and whisk. Add the peppers, red onions, ham and cheese and whisk some more.
Grease your muffin tin with butter and then pour the egg mix in and put it into the oven at 180°C for 15 minutes.
Serve while still warm with a side salad or leave to cool and have it as a snack on the go!
