Sheet Pan Salmon

This meals is one of my go to meals when I want minimum effort, few dishes to wash and flavour that slaps. I mean you really cant go wrong with a sheet pan meal.



I also love it because it's a great way to share a meal at the table as a family. In my recipe I used baby corn, tender-stem broccoli and zucchini but you can use any veg you like and adjust the cooking time accordingly.


Serves 4

  • 600 grams salmon filet (skin on)

  • 200g butter

  • 8 shallots cut into quarters

  • A handful of shredded parsley

  • 6 cloves of garlic, crushed

  • 200 grams tender-stem broccoli

  • 200 grams baby corn

  • 2 medium sized zucchini, cut into large dice

  • 2 tbs olive oil

  • Salt and pepper to taste

Pre-heat your oven to 180°C for 10 minutes.


Line your sheet pan with baking parchment and then layer it with the mixed vegetables. Drizzle the olive oil over the vegetables and season with some salt and pepper. Put it into the oven to cook for about 10 minutes.


As it is cooking, mix together the garlic, some black pepper and soft butter and then spread the mixture over the uncooked salmon.


Take out the veg and place the salmon directly on to the vegetables and place it back into the oven for another 10 minutes.


Garnish with the shredded parsley and serve.
