My son is the king of demands and most times when you see me bake it’s because of him that I bake………. So cue Banana surprise muffins.
Why surprise? Well, because inside that lovely moist banana muffin, there’s a generous dollop of……NUTELLA!!! Yup Nutella. On this day I was feeling particularly indulgent and I decided to jazz up my basic banana muffins.
I took these babies to work as a treat for our management meeting and they were a hit. The original requester, my son, loved them too and I hope you do too. They make for a great teatime snack and kids love them too!
Makes 6 large muffins
- 4 large overripe bananas, mushed
- 250 grams all-purpose flour
- 200 grams sugar
- 1.5 teaspoon baking powder
- 1 tsp vanilla essence
- ¾ cup vegetable oil
- 2 large eggs
- A jar of Nutella
For the frosting
- 250 grams mascarpone cheese
- 10 grams icing sugar
- Cinnamon powder
Special equipment
- A muffin tray
- Muffin cups
Pre-heat your oven to 180°C
Mix together your ‘wet’ ingredients and sugar in one bowl. (mushed bananas, vanilla essence, vegetable oil, eggs). To this mixture, sift in the rest of the dry ingredients, flour and baking powder, and then gently whisk together. This will form a thick batter.
Fill each muffin cup halfway with the muffin batter, then spoon in one teaspoon of Nutella into the middle of the mixture and top it up with more of the muffin batter.
Place this on the middle shelf of the oven at 180 degrees for about 20 minutes or until they are a golden brown colour. Let the muffins rest before icing them.
In a bowl, mix the mascarpone cheese with the icing sugar. It will become slightly runny. Dip the tops of the muffins in and twist to remove, garnish with a generous sprinkling of cinnamon powder and serve with a cuppa!
