Breakfast Burrito

This is my attempt at one of my favourite breakfasts from a local cafe, a burrito. So, the cafe has an egg and bacon one that I always have with some salsa and a side of home fries but some days I don’t want to go out of the house.


I attempted to make a homemade version of the burrito which I think is another great breakfast idea for the weekend.

Its versatile enough that everyone can chose what fillings to have.

I filled mine with cheese, eggs, bacon and some salsa. My son chose to have egg, cheese and sausage for his filling. The great thing about the fillings is you can make them ahead and have them laid out so that you have this burrito cook station. It’s quite fun actually

Serves 4

  • 1 pack of 8” or 10” tortillas

  • 4 eggs

  • 8 rashers, streaky bacon

  • 1 cup grated cheddar

  • 1 cup grated Mozarella

  • 3 large tomatoes, chopped

  • 1 large onion, chopped

  • 1/2 cup coriande, chopped

  • Juice of 1 lemon

  • 2 green chili, chopped (optional)

  • Salt to taste

Prepare scrambled eggs and bacon to your liking and set aside.

In a bowl, mix the tomatoes, onion, chili, coriander and lemon juice. Mix well and season with salt.

Lay out your tortilla and spoon a quarter of the egg, bacon, cheese and salsa down the middle. Fold over the short edges of the tortilla over the filling and then fold the longer edge over this and roll into a burrito. Heat your pan with a little bit of oil and place the burrito fold side down into the pan and let it heat through. Your tortilla should be a golden brown. You can then flip over the burrito and brown the other side.

Once ready you can serve with your choice of side like home fries or salad.
