Who doesn't love cookies!! The other day I was super inspired to bake cookies and bake I did. This recipe is just one of the 3 different cookies I made that day.
This recipe will give you soft chewy cookies that are super moreish.
Makes 35
200 g salted butter
200 g white sugar
220 g soft brown sugar
2 tsp vanilla extract
2 large eggs
360 g all-purpose flour
1 tsp bicarbonate of soda
½ tsp baking powder
1 cup chocolate chips (or chunks, or chopped chocolate)
Preheat your oven to 180°C. Line a baking sheet with parchment paper and set aside.
In a bowl mix your flour, bicarbonate of soda, salt and baking powder and set aside.
In another bowl, cream the butter and sugars until the butter is soft and pale yellow. Next, whisk in the eggs and vanilla.
Add the dry ingredients to the wet ingredients using a spatula or your dough hook on the mixer. Once combined, add the chocolate chips and mix them well.
To portion your cookies, you can use a tablespoon to scoop and use your hands to roll them into a ball. Place them on your baking sheet at least an inch or two apart. Place your tray in the oven and bake the cookies for exactly 10 minutes or they JUST start browning.
Take them out of the oven but let them sit for a couple of minutes before putting them on a cooling rack.
Enjoy with your favorite hot bevvy or a cold glass of milk.
