This is hands down one of my favorite breakfasts EVER! Generally I’m not a sweet tooth and especially not for breakfast but formthis I make an exception.
The trick is to use fresh brioche buns rather than regular bread for this. It’s also a perfect breakfast for the kids and the whole family.
Serves 5
5 brioche buns (you can also use plain burger buns)
4 eggs
1/2 cup milk
1/2 cup double cream
1 tsp cinnamon
1 tsp nutmeg
2 tbs castor sugar (If you're using regular bread)
1/2 cup chocolate chips
1/2 cup raisins
400 grams mixed berries
300ml extra double cream (or 1 tub marscapone cheese)
Take your brioche buns and cut them in half across the width and set aside. Crack your eggs into a bowl and then add the spices, milk and double cream. Beat by hand using a fork until it’s all combined.
Set aside a baking dish.
Dip your brioche into the egg mix and make sure it is well coated on all sides then place into the baking dish. Do this for all the bread then pour the remaining egg mixture into the baking dish. Let this sit for 20 minutes.
Pre-heat your oven to 180°C for about 10 minutes. Cover the baking dish with foil and make sure there’s no room for moisture to escape (otherwise your French toast will be dry). Place the baking dish on the middle shelf in the oven and let it bake for 10minutes. As it bakes, gently whip up your double cream until it’s smooth, thick and fluffy.
Once the French toast is ready, remove the foil and let it cool slightly before garnishing it with the cream/cheese, berries and a generous dusting of icing sugar.
