Sausage and Vegetable Hash

With most parents having the kids at home for the next 2 months, feeding them healthy exciting food, I'm sure can be a headache sometimes.


Cue in a sausage and veg hash. What this is, is basically a sheet pan meal consisting of a veggie mix and sausages, possibly served with a homemade tomato sauce or ketchup. The great thing about this combination is that you can use whatever veg you feel like. For this hash, I used carrot, butternut, mushroom, onion, peppers and broccoli and of course the sausage.

You can use potatoes, carrots, onion, asparagus, cherry tomatoes, zucchini.....the list is endless it just depends on your preference


Serves 4

  • 8 standard sausages

  • 2 potatoes or 1 large sweet potatoe, diced

  • 1 small head of broccoli, separated

  • 1 large onion, quarters

  • 1 large carrots cut into discs

  • 1/2 red pepper cut into strips

  • 3 garlic cloves, crushed

  • 1tsp thyme

  • Oil

  • Salt and pepper to taste

Special Equipment

  • Flat baking tray


Pre-heat your oven to 180C

We'll start by putting all the vegetables, thyme and garlic into a large bowl. Season with some salt and pepper and then drizzle about 3 tablespoons of oil over the vegetables and then mix them really well.


If you're using a baking tray, line it with foil and then spread the vegetables as well as the sausages on to the tray and put into the pre-heated oven for 20 minutes.


After 20 minutes, take it out and serve with some home made tomato sauce or ketchup
