Succotash

Succotash is basically githeri….. so essentially this is another way to eat your githeri aside from the usual toss it in copious amounts of water and boil *sic*.


I actually discovered this salad years ago at an office I used to work at. Every Friday afternoon we would get a trolley full of drinks and snacks at the top and this was one of the snacks, served up in these cute clear cocktail bowls. I found it really bizarre given that I had always had it as a hot meal.


As you can tell, my opinion changed. It’s actually one of my fave salads to have especially in a setting like a bbq or a family meal setting. You can even have it as a cold salad or a warm salad and it helps that it is super nutritious. I am convinced I can convince you to change your mind as well.

Serves 6 (as a side dish)

  • 1 tin red kidney beans

  • 1 tin cannellini (white) beans

  • 1 cup cooked sweetcorn

  • 1 cup halved cherry tomatoes

  • 1/2 cup diced onions

  • 1/2 cup diced cucumber

  • 1 cup diced chorizo sausage

For the dressing

  • 1/4 cup olive oil

  • 1/4 cup balsamic vinegar

  • 1 tbs black pepper

  • 1/2 tsp salt

Drain the liquid from the kidney beans and cannellini beans and place them into a bowl together with the sweetcorn, tomatoes, onion, cucumber and chorizo and set aside.


Pour the olive oil, balsamic vinegar, salt and pepper into a glass jar. Place the lid on and shake, shake, shake. Pour over the bowl with the salad and toss it all together.
