Tomato and Chorizo Soup

This soup is fun! I know its a strange description to give it but its fun. For me it was a party in my mouth. The acidity of the tomatoes and the spiciness of the chorizo are a perfect compliment to each other. Add some sour cream and bread and its a party in the mouth.



I was keen on this recipe because it seemed (and is) super simple. In the winter, its a perfect hug in a bowl. In the summer, the use of fresh tomatoes makes it light and fresh.


Serves 4

5 large fresh tomatoes, diced

1 large onion, diced

150 grams of whole chorizo

3 tablespoons of tomato paste

6 cloves of garlic, crushed

1/2 cup, chopped flat leaf parsley (you can also use corriander)

1.5 litres chicken stock

Salt

Pepper

Olive oil


First step is to handle the chorizo. You will need enough water to cover your chorizo in a pan and put it to the boil. Let it boil on a medium heat until all the water evaporates. Once this is done, take your sausage and dice it into chunks.


In the same pan, add some oil, your onions and garlic and cook on a low heat until the onions are soft and translucent. (make sure the garlic doesn't burn) To this, add the chorizo and cook for a further 2 to 3 minutes. Add the fresh tomatoes, half of the parsley and some salt and pepper, and stir it up.


Add the tomato paste and stock and let it simmer on a medium heat or until the sauce has thickened. You can serve this with some crusty bread and sour cream............I had mine as is... sooooo much flavour.
