I believe gizzards are a national treasure, I really do. Depending on how they are cooked they make for a nice light snack or part of a healthy balanced meal.

All the same, this chicken offal, is a tasty affordable protein that is easily available. There’s many ways of cooking it and this is one of them. It has a bit of sauce or as Kenyans like to call it, a ‘wet fry’. Cooked this way it goes perfectly with some ugali or chips or even plantain.
Serves 2
300 grams chicken gizzard
1 medium onion finely chopped
1 large tomato, diced
1 cup capsucim, cut into large chunks
2 green chili, chopped
1 tbs tomato paste
1/4 cup coriander
Cooking oil
Salt
Pour some oil into a pan and heat up to smoking point then add your chicken gizzards. Cook them on a high heat for 10 minutes then take them out of the pan and set aside.
in the same pan on a low heat, add your onion, tomato and tomato paste and mix well. Add a splash of water and let simmer until the tomatoes are soft. Put the gizzards back into the pan along with the chili, capsicum and season with salt.
Cover the pan and let this cook on a low heat for another 5 minutes and you’re ready to serve.
