Caesar Salad Dressing

One of my favorite salads in the world is a caesar salad and this is because of a combination of the dressing and the fresh crispy leaves and the crunchy croutons.

The thing is, shop bought caesar dressing doesn't do you justice. It may as well be mayo with bits in it.



When I made my own caesar dressing, my life changed forever. I have now become a snob. I kid you not, a home made dressing tastes so much better. Another great thing about the home made dressing is that it keeps well in the fridge, about a month, as long as its in an airtight container.


Makes 200ml

  • 6 anchovy fillets

  • 1/2 cup Olive oil or Canola oil

  • 2 egg yolks

  • 4 cloves of garlic, crushed

  • Salt and pepper to taste

  • Juice of 1 lemon

  • 1 tablespoon mustard

  • 1/2 cup grated parmesan

Finely chop the anchovies and put in a bowl together with the garlic. Add the egg yolks, mustard and lemon juice. Whisk together with an electric whisk. Keep whisking as you gradually add the olive oil a bit at a time. Keep whisking the mixture until it turns a pale yellow. Add the grated parmesan to the dressing then salt and freshly ground pepper to taste. Add lemon juice if need be.


Thats literally it guys. My advice, make a batch and keep it in a glass jar for whenever the craving strikes, you won’t regret it!!
